Large Osip Cider

A medium-dry cider made in collaboration with Martin Berkeley of Pilton Cider. 

Merlin and Martin selected the apple varieties together, before the subsequent blend of juice was "keeved", a traditional and artisanal fermentation process that results in natural carbonation, drawing on the juice's own sugars without the need for additives.
